OIL MANAGEMENT WORKSHOP

EVENT OVERVIEW

SNAC International, in partnership with the Institute of Shortening and Edible Oils, will host a one-day workshop covering best practices for oil management throughout the snack production process. The workshop will also review the most pressing issues involved in oil application, and how the use of different types of oils impacts taste, quality and nutritional profile.

Industry experts will discuss:

  • Basic oil chemistry
  • Various types of oil processing
  • Proper oil handling
  • Oil analysis: when to measure, what it means, and what to do with the resulting information
  • Frying oil chemistry
  • Equipment management and selection
  • Active and passive filtration
  • Oil selection
  • Edible oil trends and consumer preferences
